The ramen that made this shop famous
1. Special sirloin beef shio tonkotsu ramen
This bowl has earned rave reviews across social media platforms. The broth, made by slowly simmering beef bones with a touch of chicken, results in a creamy, milky-white base that is rich and flavorful without feeling heavy or greasy. It clings to the noodles beautifully, delivering a deep, satisfying umami with every slurp.
The highlight of the dish is the sirloin beef — generous slices of perfectly grilled meat that are juicy, tender, and slightly charred for an added layer of aroma. Paired with soft-boiled eggs, braised pork, and other carefully selected toppings, this ramen offers a complete and satisfying experience. The thin, smooth noodles blend effortlessly with the broth, and diners can further customize the flavor with the condiments available at each table.
2. Spicy beef bone chashu ramen
For those who enjoy a bit of heat, the Spicy Chashu Ramen offers an exciting twist. It starts with the same beef tonkotsu base, enhanced by layers of chili oil and aromatic spices. The result is a bold, slightly sweet broth with a tingly, numbing spiciness, blending the essence of Japanese ramen with a hint of Sichuan flair. The thick, tender chashu slices provide a mildly sweet contrast to the heat, creating a well-balanced, deeply satisfying bowl. It’s one of the most addictive ramen experiences you’ll find in Osaka.
In addition to these signature offerings, Mugen Ramen is known for its limited-time specials. Seasonal bowls such as spicy miso beef ramen in winter or chilled ramen in summer make regular appearances and are available only for a short time. These specials are announced through their official X (formerly Twitter) account, encouraging fans to check in often and visit before they’re gone.
The shop also shares regular updates on customer favorites, most popular orders, and even gives shoutouts to returning visitors. It’s clear that Mugen Ramen is more than just a chain — it’s a community built around a shared love for truly great ramen.

Opening hours: 11:00 AM – 6:00 AM the next morning

Makotoya originally started with a very different idea, serving luxury ramen topped with shark fin. But as customer tastes changed, the founders refocused their concept and introduced beef bone broth ramen that was richer, more accessible, and deeply satisfying. That change made all the difference. Since then, Makotoya has grown into a beloved national chain with over 80 locations across Japan, but the Shinsaibashi Main Store continues to represent its original heart and flavor.
Must-try ramen
1. Beef bone white broth ramen
This is the shop’s signature dish. The broth is made by pressure-cooking 30kg of beef bones until the marrow melts, creating a thick, creamy, and milky soup packed with umami. The flavor is rich but surprisingly clean, and the soup coats the thin, firm noodles perfectly. Toppings include house-made chashu pork, soft-boiled eggs, black wood ear mushrooms, and green onions. It’s hearty and comforting — a complete bowl.
2. Spicy beef bone ramen
If you like heat, this one adds a kick to the signature broth. Made with a blend of chili oil and Makotoya’s original spicy miso, the soup is bold, flavorful, and has a pleasant lingering spice. The rich beef broth and spicy toppings create a layered, addictive taste that will have you finishing the bowl in no time.
3. Chicken broth ramen
For those who prefer something lighter, the chicken-based ramen is a great choice. The clear soup is mild but flavorful, and it pairs with soft, bouncy egg noodles. It’s topped with juicy chashu, a perfectly soft-boiled egg, and slices of sweet cabbage that balance the whole bowl. It’s simple, clean, and satisfying.
What makes Makotoya Ramen – Shinsaibashi Main Store so special is the amount of care put into every detail. Unlike many large chains, every store prepares its broth fresh, on-site. The beef bones are cooked under pressure to extract every bit of flavor, creating a creamy soup base that tastes homemade, not mass-produced.
In a city full of ramen competition, Makotoya Shinsaibashi Main Store stands out not with flashy toppings, but with honest, flavorful, and perfectly crafted bowls that make you want to come back again.

Signature ramen – what to try
Shellfish soy sauce ramen
This is the shop’s signature bowl, a clear, delicate soy-based soup enriched with the essence of oysters, clams, and freshwater clams. It’s light but full of depth, with a gentle sweetness and long-lasting umami that builds with each sip. Unlike heavier tonkotsu ramen, this bowl is clean, elegant, and easy to enjoy even late at night.
Toppings are carefully selected: two kinds of pork chashu, a golden soft-boiled egg, fresh greens, and a standout piece — truffle-scented fishcake handmade in-store. The noodles are medium-thin and straight, perfectly suited for the broth and designed to hold just the right amount of flavor.
What makes Noguchi Taro Ramen–Shinsaibashi stand out is the chef’s philosophy: to serve a bowl of “everyday happiness” with the same care you’d find in a fine-dining restaurant. It’s the kind of place where you can go on a date, stop by solo after a night out, or bring someone who’s new to ramen and really impress them.
Open until 4 AM, it’s also a lifesaver for late-night food cravings. Light, elegant, and full of flavor, this is ramen for people who love the little details, and it’s worth every bite.

Must-try menu items
1. Special asari clam shio ramen
This is the star of the menu. The broth is built on the delicate brininess of asari (Japanese clams), delivering a light yet deeply savory flavor. Clear and golden, the soup is layered with umami from the sea, balanced with thin noodles, two types of pork chashu, and seasonal greens. It’s topped with a soft-boiled egg and fragrant oils that elevate every sip.
2. Shio-style mazesoba
This dry noodle bowl skips the soup but keeps all the impact. The noodles are thick and chewy, tossed in a savory salt-based sauce and topped with chopped chashu, green onions, shredded nori, and a soft egg. It’s bold, rich, and perfect if you’re in the mood for something more intense and textural. Stir well before eating to coat everything evenly.
3. Sea bream salt tsukemen
Though not always available, this seasonal special features a dipping broth made from sea bream (tai) and salt, offering a rare and elegant flavor. The noodles are served separately and dipped into the light yet umami-rich soup — a treat for those who enjoy tsukemen with a twist.
SiO Style is a place where ramen is reimagined. Instead of heavy broths or flashy toppings, the focus is on clarity, technique, and honoring each ingredient. Whether you’re a seasoned ramen fan or just curious to try a salt-based variation, this shop offers something refreshingly different in the heart of Osaka.
From the perfectly cooked noodles to the clean, flavorful broths and late-night hours, it’s a spot well worth adding to your ramen map.

Must-try ramen
Tonkotsu ramen
This is the star of the show. The broth is creamy, almost milky-white, made by boiling pork bones for hours until every ounce of umami is extracted. It’s thick but not greasy, flavorful but not overpowering. The noodles are thin and straight — classic Kyushu style and cooked to just the right firmness. Toppings include slices of tender pork chashu, green onions, kikurage (wood ear mushroom), and sesame seeds.
Akagi sticks to its roots and does it exceptionally well. The broth is always spot-on. The noodles are cooked to order. The shop is clean, efficient, and welcoming.
For locals, it’s a go-to comfort food spot. For visitors, it’s a great way to experience a “neighborhood favorite” that delivers classic flavors with serious depth.

Every bowl has a unique narrative to tell, whether you’re following a local’s tip or just strolling into a small store on a quiet street. The true delight lies not just in discovering the “best” ramen but also in witnessing the attention to detail, inventiveness, and personality that go into each one. Explore, slurp loudly, and allow each bowl to take you by surprise.
